POTATO

PANCAKES

1/2 quart milk

4 eggs

1 ounce salt

1/4 tablespoon white pepper

1/4 cup vegetable oil

3/4 pound flour

4 ounces baking soda

1 cup diced onions

4 1/2 pounds shredded potatoes

In a large bowl, whip milk, eggs, salt, pepper and oil until well-blended. Add flour, baking soda, onions and potatoes. Mix well. Cook pancakes on a greased or well-seasoned flat grill until golden brown on both sides. These were served with a side of applesauce.
